Best suitable background

Dear all,
It is my intention of creating a digital catalog of my collection, accessible online.
I am planning to take all the pictures at the same distance and dimensional ratio, so that at the general view, one has the idea of the real sizes.
I have to decide which is the best way of taking the pictures, especially regarding the background, which I would like to be the same for all bottles.
There are three choices: pure white, pure black, or gradient grey.
Each of them has his pros and contras, but probably the gradient gray is what is better fitting all types of bottles. In fact, it will not look so good to see, for example, a monochrome black bottle on the black background.
What do you think? Would you do the same or would you change the background according to the bottle?

Fantastic!

I would think the gradient gray would be the most versatile choice.  Are you committing to one color background because of how your images  would look in a grid format?  Whatever you choose, I will look forward to seeing your collection.

Thank you dear Rube and Joey.
I would like one type only of background for matter of uniformity.
Instead, keeping the same picture-size/real-size ratio is, I think, important just for how the bottles will look in the grid format, I mean the main page where all bottles are displayed.
That way it will be like looking at a real display of bottles.
BTW it is a long-term project, because I have to photograph all the bottles again.

The frame of the bottle is loss to the background.

I see auction houses using a grey base that gradually fades to black background. This seems to give a nice picture.

Yes, the black background, although great in some cases, is not suitable at all for black or very dark bottles.
I was just playing around this last night, with my black lacquer bottle.
With the black background the bottle almost disappears, and with the white background the contrast is too hard for the eye.
The best solution is indeed the grey background.

Sounds like fun Giovanni.
I am going to take my own photos too after my colleague left for another job. Hopefully the quality will be as good as his.

Just for further consideration, how inside painted Glass/Agate bottles and grey bottles(Grey-Green Jade, Greyish Chalcedony, Thumbprint Agate) looked under a grey background?
These looks very good under black background.
